  • Butter plate
  • 10 tablespoon of butter
  • 1 1/2 tablespoon of flour

Making the yeast dough:

  • 1 1/2 tablespoon of active yeast
  • 2 tablespoons of butter
  • 17 tablespoons of flour
  • 1/2 of cup of milk
  • 3 1/2 tablespoon of sugar
  • Salt

Chocolate filling:

The first thing you want do is prepare the butter plate. Mix 10 tablespoons of butter and 17 tablespoons of flour. Take a plastic wrap and put the mix butter between one layer of plastic. Use a rolling pin and roll the dough into a 20 x 12 cm plate. Leave it in the wrap and put it inside the fridge for about 30 minutes.

Then move on to making the yeast dough. Heat up the milk and place the yeast inside the milk. Take another bowl to mix the flour, melted butter, sugar and the salt. Then gradually start to add the yeast and milk mix. Blend it together continuously until you see the dough smoothed out. Wrap it in the bowl as well in and refrigerate for 30 minutes.

Get the yeast dough out of the refrigerator. Roll it in a rectangular 40 x 25 cm plate. Place the butter plate in the middle of the yeast dough. Take off the wrap. Fold the yeast dough around the butter plate. Use the rolling pin and roll out the dough. Make it the size of the 40 x 25 cm plate. Fold it again. Place it in the refrigerator for half an hour. Take it out and repeat the rolling and folding. Put the dough in the refrigerator for an hour. Roll out again into a long rectangle. Cut the dough into triangles.

When it comes to the chocolate filling. Take the chocolate and cut it into small chunks. Roll out the triangle and make it slightly bigger. Place the chocolate at the shortest end. Then roll towards the tip of the dough. The dough has to overlap three times. The tip should stick out from underneath.

Preheat the oven at 210°C. Have the baking sheets with baking paper prepared. Put the croissants on the sheets. Use a small bowl to mix the egg yolk and heavy cream. Brush a tad of this on top of the croissants.

Bake for 15-20 minutes. When it is done remove from oven. Let it cool for 15 minutes. Melt 3 1/2 tablespoons of chocolate. Then sprinkle over croissants.

To begin, combine two cups of flour, two and a half packages of yeast, and a teaspoon and a half of salt. Then, stir in two cups of warm water and beat until all blended smoothly.

While doing that, I continue to add about four more cups of flour, or however much of that it will allow me! Next is the fun part. I knead the dough, and then set it aside in a warm area to rise. After that, the remaining steps are our easy, and most basic ways of preparing bread dough. Before we bake the bread, we add the final two ingredients. We sprinkle a little bit of cornmeal a top our dough, and we brush it with an egg white. That’s it! Into the oven it goes, and in just a little less than an hour, we will have a delicious chunk of french bread.

I have found that baking french bread is truly one of the most simply things out there. Now that my favorite recipe is out there, there is no reason that people should head to the grocery store to buy those loaves! Now it’s time to pour my dry ingredients into my bread machine after I’ve set it to the dough setting.

Once the dough is done, I put it onto a lightly floured surface so that it’s easy to work with. I knead in just the right amount of flour to be able to easily manipulate my bread.

After that, it’s the technical aspects. I roll up my dough and I cut it into circles about an inch thik before placing in a greased pan. I cover that pan and place it in a warm area so that it can rise.

Then comes the fun part!

After it’s done baking for about 25 minutes, I make my own glaze. The glaze is the fun part where I get creative and try out different ways. I encourage you to do the same. Powdered sugar, vanilla, and a little bit of milk are what I use to drizzle on top of these treats! Also, don’t forget to add generous amounts of cinnamon, brown sugar, and butter to the inside of the roll before baking. That’s what makes them sweet and delicious!

I make Dark Rye bread at home in my bread machine, and I find that there are ingredient substitutions to make your recipe healthier while preserving the flavor and texture of the bread. I think two keys to a quality healthier Dark Rye bread recipe are white flour replacements and sweetener substitutions. Let me explain how I like to do it, because I have gotten some good results using these techniques.

When I make healthier versions of Dark Rye bread dough, I always try to sub out some of the refined white flour with a healthier flour. I recommend finding a high protein white flour from a local organic market and mixing this flour in with whatever white flour you are using in your dough mixture. I wouldn’t try using this high protein flour only, but if you swap some of your white flour out in this way, you can seriously up the protein content of your Dark Rye bread.

I had to play around with a lot of different flour mixtures until I found the right proportions for my bread machine. I would start by substituting about a quarter of your standard white flour with high-protein flour and then seeing whether you like the results. I get different results with different bread machines, so realize there will be some trial and error involved.

Since Dark Rye Bread is a sweet bread and calls for molasses, I recommend using black strap as a partial replacement for regular molasses. I like black strap because it is rich in potassium and minerals. Black strap adds a slightly licorice-y flavor, but it is less refined than regular molasses and much healthier. As a start, I would use one tablespoon regular molasses and one tablespoon black strap, and then play around with the proportions until you find a combination you like. I have made Dark Rye bread using black strap only, and it comes out with a flavor that is still sweet but slightly more bitter than the traditional version.

Another trick for a healthier Dark Rye bread is to add small amounts of milled flax seeds to your dough mixture. I like adding flax because it is rich in omega-3’s. I would choose milled or finely ground flax seeds because these fold in well with the dough mixture and they don’t alter the texture or flavor of the bread. I wouldn’t add more than a couple of tablespoons, however, because too much flax can make the bread gritty and slightly sour.

  • Warm water approximately 45 degrees Celsius 180 mL.
  • Two tablespoons of vegetable oil.
  • Two tablespoons of sugar.
  • One teaspoon of salt.
  • Bread flour 135g
  • Wholemeal flour 120g.
  • One teaspoon of quick yeast.

Now keep in mind that the measurements will be different based on the size of your loaf of bread. If you want to make a smaller loaf of approximately 500g, use the recipe above. If you want a slightly larger loaf of bread, you can use the recipe below.

For a 750g loaf:

  • Warm water 330mL.
  • One tablespoon of vegetable oil.
  • Five tablespoons of skimmed milk powder.
  • One tablespoon of sugar.
  • Wholemeal bread flour 450g.
  • Dried yeast 1-1/2 teaspoons.
